Ruth Elaine Day Coufal
Ruth Elaine Day Coufal, 86, of Demi John Island, went home to be with the Lord on Monday, September 3, 2012, in Lake Jackson, Texas surrounded by her loving family.
Ruth was born on July 14, 1926 to William Francis and Mary Louise Day in Port O'Connor, Texas and moved to Surfside in 1929 when her father, a Surfman in the Coast Guard was transferred to Station Freeport. In 1946, Ruth met the love of her life, Edward Coufal, and they recently celebrated their 65th wedding anniversary. Ruth and Eddie lived most of their married lives in Houston, Texas, where they owned and managed Edco Air before retiring and moving to Demi John Island in 1986.
Ruth was preceded in death by her parents, William and Mary Day; sisters, Mary Lou Farmer and Laura Elizabeth Picard; and brother, Joseph Richard Day.
Ruth is survived by her loving husband, Edward R. Coufal, son, Alan (Sharon) Coufal of Katy, TX; daughter Kathy (Ron) McIntire of San Antonio;; four grandchildren, Kymberley (Dax) Zamponi; Megan (Tony) Webb; Emily (Ted) Vann; and Brian Coufal; and five great-grandchildren, Presley, Graham, Gabriel, Andres, and Gavin; brothers-in-law Clarence Coufal, Lynn Coufal, and sister-in-law Taffy Vinson; as well as numerous nieces, nephews, and loving friends.
A service to remember and celebrate her life will be held on Thursday, September 6, at 2 pm at Lakewood Funeral Chapel in Lake Jackson, Texas. Interment will follow at Restwood Cemetery.
The family will receive friends from 6 to 8:30 pm, at the Lakewood Funeral Chapel. A rosary will be held at 7 p.m. with Deacon Wallace Shaw officiating.
Pallbearers will be Brian Coufal, Charles Farmer, Stuart Farmer, Paul Picard, and Ricky Day.
Special thanks to IPH Hospice and the staff at Oak Village Healthcare for their wonderful care and support over these last few weeks.

Ruth was the official family historian and matriarch of the family and loved to tell stories about growing up on the coast of Texas in Port O'Connor and Surfside beach. She was an avid reader and loved to recite poetry as well. One of her favorites was the following by Alfred Tennyson that exemplifies her spirit and love of the water.
Crossing The Bar
Sunset and evening star,
And one clear call for me!
And may there be no moaning of the bar,
When I put out to sea,

But such a tide as moving seems asleep,
Too full for sound and foam,
When that which drew from out the boundless deep
Turns again home.

Twilight and evening bell,
And after that the dark!

Ruth and Eddie were neighbors back in the 1950's and I remember fondly my grandmother (Vera Gordon) and Ruth watching soap operas together and giving me, a teenager at the time, advice on boys and life. What wonderful memories. I am so sorry I did not find her before she passed. I will always remember her. Condolences to the family.

Ed and Ruth Coufal are the most gracious, loving, welcoming, sharing, caring and FUN LOVING couple I have met. They are a rich example of how one should enjoy the life we have on this earth. I will always have fond memories and laugh out loud at the good times shared with the entire Coufal clan, especially those infamous Christmas parties at Edco Air. With Love from the Maury family.
